Yes that's exactly what I'm planning to do - get node-red and zigbee2mqtt off the Pi and on to their own VMs under Proxmox. Then see what happens.

I would also recommend no Proxmox. run myServer on a Pi4 or Pi5.
all of these complications make it complicated and are unneeded.

I think I mislead you. Proxmox and its VMs are running on a Dell Optiplex. I've still got myServer running on your supplied Pi4 and USB thumb drive. So what I'm moving to is myServer alone on the Pi4 and node-red and zigbee2mqtt on the Dell Optiplex under Proxmox.

Ok, good stuff.

So I've pulled everything extraneous off the myServer RPi4 and created a bunch of Proxmox VMs instead. Now we wait and see if it's more stable.
