I have a Tripp Lite UPS......will that work to gracefully shutdown myServer, or is an APC required? The Tripp Lite does support NUT.

I was going to try something similar to the X728. Are there any instructions on how to set that up?

Are you refering to the Geekworm X728? You can get more information about that device on the Geekworm's web site:
geekworm.com/products/x728?srsltid=AfmBO...YvXzE09Vi1PfmP6J5UHg
It says it uses a 40 pin header. Unfortunately I have very little knowledge of the Rasberry PI systems, so I do not have any idea on where to plug that in.
