This is what I get when I try to boot from the old SSD
Anything I can do from that?

Boot from a new 400mb/s samsung usb that has the new Master image on it.

Hi Davd. Would I be right in thinking that means I'm screwed?

The new PI booted no problem from a new USB and again when I added the old SSD back in. I couldn't see the SSD in file manager though

What is the TeamViewer ID when booted from the Samsung USB and the SSD is in? Send this on a PM or email please.

Do you have the USB jumper installed? Without that, the Pi can't see the SSD drive.
